The Perfect Margarita

Made to order with fresh lime juice, the Enchilada Queen’s margarita recipe is a huge favorite in our bar and in my home. Of course, the higher quality the tequila, the smoother the flavor! When making margaritas with premium aged tequila known as añejo, we use top-quality Grand Marnier, orange brandy. With reposado tequila, we use high-quality but slightly less expensive triple sec, orange-flavored liqueur. Our house margarita is made with good-quality silver tequila and agave nectar.

To salt the rim of a margarita glass

Moisten the rim with a wedge of lime, then press the rim into a thin layer of kosher salt.

Bar (Simple) Syrup

It’s not called simple for nothing. It could also be called Handy Syrup. Indispensable for making cocktails, this mixture of water and sugar also works well in iced tea. No more undissolved sugar at the bottom of the glass. Use the same ratio as teaspoons of sugar.

Makes 1 cup

1 cup granulated sugar

1 cup cold water

In a medium saucepan over medium-high heat, combine the sugar and water, stirring to dissolve the sugar. Bring to a boil, then reduce the heat to low, stirring constantly until the sugar dissolves completely and the mixture is clear, 3 to 5 minutes.

Let cool completely before using.

Store at room temperature in container with tight-fitting lid.
