Agua de Sandía

WATERMELON JUICE DRINK

I love watermelon, and this is one of my very favorite agua recipes. When we serve Agua de Sandía for Sylvia’s Enchilada Kitchen brunch, we have to make extra since our customers go back for seconds and thirds.

Makes 1½ gallons

4 quarts cubed seedless watermelon

3½ cups cold water

Up to 1½ cups sugar

12 cups ice cubes

Place batches of watermelon in a blender, add cold water to the top of the fruit, and puree until smooth, about 1 minute. Continue to process until all the fruit is blended with 3½ cups cold water.

Pour the blended watermelon into a 2-gallon pitcher. Add ½ to ¾ cup sugar. Taste and add more sugar, if desired. Refrigerate until very cold before serving.

To serve, half fill a clean 2-gallon pitcher with ice. Pour the watermelon juice drink over the ice. Serve immediately.
