Lemon-Garlic Roasted Broccoli

Even if all you have is 5 minutes to prep, you can have a pan full of crispy, caramelized roasted broccoli that even the pickiest of eaters will devour.

Makes 2 or 3 servings

Prep time: 5 minutes

Cooking time: 20 minutes

1 pound broccoli florets

3 tablespoons coconut oil or ghee, melted

3 garlic cloves, minced

½ teaspoon sea salt

½ teaspoon freshly ground black pepper

1 teaspoon fresh lemon juice

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or aluminum foil.

2. Arrange the broccoli florets in a single layer on the prepared baking sheet. Drizzle the broccoli with the coconut oil and season it with the garlic, salt, and pepper. Toss gently to coat.

3. Roast until golden brown in spots, 15 to 20 minutes. Drizzle with the lemon juice before serving.
