EGG-FREE, NIGHTSHADE-FREE, VEGETARIAN
These apple “cookies” are a super-satisfying snack that both kids and kids at heart will love. They taste great with just about any nut butter and can be further customized depending on your favorite type of apple—whether you prefer Pink Lady (like Noelle) or Fuji (like Stef).
Makes 4 servings (12 to 14 “cookies”)

2 large sweet apples, such as Pink Lady or Fuji, cored with an apple corer and sliced crosswise into thin rings
½ cup almond butter
Dash of ground cinnamon
½ cup unsweetened coconut flakes
½ cup chopped raw pecans
½ ounce unsweetened baking chocolate, finely chopped (optional)
1. Place the apple slices on a tray or baking sheet. Spread the nut butter on one side of each apple slice and sprinkle with the cinnamon.
2. Top the slices with the coconut flakes, pecans, and chocolate (if using). Serve immediately.
Special equipment: Apple corer
Noelle’s tip: Coarsely chop the coconut flakes if you have some extra-long pieces.
Change it up: Use another nut butter, such as cashew or sunflower seed butter. Swap out the pecans for another nut, such as walnuts or cashews.
