Happy Belly

COLLEEN BAXTER

Through most of my fashion modeling career, I was indoctrinated to fear fullness or curves, and even strength and muscle tone. It never felt like my body was just right. My agents told me I had to stop backpacking and rock-climbing, and eventually that hit a nerve. I chose “health and happiness” as my mantra, and decided that as long as I was eating healthy and exercising and felt good, then I would accept and love my body as it was.

My cooking philosophy is grounded in the rich healing powers of nature. My body- and mind-nourishing recipes are pre- or probiotic rich and nutrient dense, and support overall energy and well-being. As we balance the gut and hormones with healing foods and flavors, we can better tune in to our body and internal wisdom, and live with more peace, joy, and purpose.
