SCRUMPTIOUS SCALLOPS

Looking for a great alternative to red meat? Look no further! Scallops are the perfect lean protein choice. They are surprisingly easy to make, and even friends who don’t like fish will likely enjoy eating this delicious dish. Scallops have a mild seafood flavor and smooth, buttery texture. INGREDIENTS (1 Serving):

3 ounces sea scallops

Sea salt and freshly ground black pepper, to taste

2 tablespoons extra-virgin olive oil

Lemon wedges, for serving (optional)

DIRECTIONS:

1.    Gently pat the scallops with a paper towel until completely dry, then season with salt and pepper.

2.    Heat the olive oil in a nonstick skillet over high heat.

3.    Add the scallops, flat side down, and let cook without touching them until they are well browned, about 2 minutes.

4.    Flip the scallops to sear on the other side for another 1 to 2 minutes, depending on size and thickness, taking care not to overcook.

5.    Serve immediately, dressed with a squeeze of lemon, if desired.
