FLOURLESS FLAX WAFFLE

Pancakes and waffles are my favorite indulgences, but the sugar crash that comes with them is not. I created this recipe as a great pre- or post-workout treat that is not only filling, but also satisfying and comforting at once. The sweetness from ripe bananas helps caramelize the waffle, and not only do they freeze well, but you can also make the batter days in advance and throw it in the waffle iron straight from the refrigerator for an easy weekend breakfast.

INGREDIENTS (1–2 Servings):

2 organic pasture-raised eggs

1 teaspoon ground cinnamon

2 tablespoons ground flaxseed

½ teaspoon pure vanilla extract

1 ripe banana, mashed

Cooking spray

DIRECTIONS:

1.    Preheat a waffle iron and set to Level 6.

2.    Combine all the ingredients in a bowl and whisk until smooth.

3.    Lightly coat the iron with cooking spray and fill with batter.

4.    Cook for about 5 minutes, then serve with your favorite toppings.
