SPICY COLLARDS AND CABBAGE SALAD
Want to shake up your salad routine? This is the recipe for you. Instead of spinach or arugula, why not try something out of the ordinary, like collard greens and cabbage? I love the taste and the texture of this salad! The sweet and spicy dressing complements the raw vegetables beautifully. To make it a more filling meal, add a protein like a piece of baked fish or quinoa.
INGREDIENTS (2–4 Servings):
SALAD
4 cups thinly sliced collard greens
1 cup thinly sliced red cabbage
1 yellow or red bell pepper, cored, seeded, and thinly sliced
Optional proteins: baked fish, quinoa
DRESSING
½ cup extra-virgin olive oil
2½ tablespoons raw honey
1½ tablespoons sriracha sauce
1½ teaspoons garlic powder
½ teaspoon lemon juice, freshly squeezed
½ teaspoon ground ginger
DIRECTIONS:
1. In a large salad bowl, combine the collard greens, cabbage, and bell pepper.
2. In a separate, smaller bowl, whisk the dressing ingredients together until well combined and emulsified.
3. Add the dressing to the salad and mix thoroughly. Top with your protein of choice (if using) and serve immediately.
