SPICED SALMON WITH SWEET POTATOES

This dish is full of healthy fats and vibrant spices to fuel your hormones, mind, and libido. The kale and sweet potatoes are great nutrient-rich fiber sources for healthy digestion and also balance blood sugar. Basically, this meal is so good, you won’t know what to do with your sexy self.

INGREDIENTS (2 Servings):

Juice of ½ lemon

½ teaspoon paprika

¼ teaspoon sea salt, plus more as needed

¼ teaspoon ground black pepper

¼ teaspoon ground turmeric

¼ teaspoon cayenne

Pinch of saffron

2 wild salmon fillets, fresh or thawed

3 tablespoons extra-virgin coconut oil, divided

1 sweet potato, peeled and sliced

4 tablespoons filtered water

1 tablespoon ground cinnamon

3 garlic cloves, crushed

Lemon wedges, for garnish

DIRECTIONS:

1.    In a dish large enough to hold both fillets in a single layer, whisk together the lemon juice, paprika, salt, pepper, turmeric, cayenne, and saffron. Place the salmon fillets flesh side down in the marinade, cover, and refrigerate for 15 minutes.

2.    Melt 2 tablespoons of the coconut oil in a skillet over low heat. Line the pan with the sweet potato slices and add the water. Sprinkle with the cinnamon and 2 pinches of sea salt, cover, and cook over low heat until tender while you prepare the salmon.

3.    Melt the remaining 1 tablespoon of the coconut oil in a second skillet over medium-low heat. Remove the salmon from the marinade, reserving the marinade, and place in the skillet, skin side down; pour the marinade over the top. Smear the crushed garlic on top of the salmon, cover with a lid, and cook over low heat for 5 to 10 minutes, or until firm.

4.    Plate the fish and potatoes with a wedge of fresh lemon for squeezing and serve immediately.
