CHUNKY SALMON MINT BURGERS

This is comfort food done in a healthy way. Despite salmon’s tremendous nutritional value, I was getting a little tired of it and its very particular taste. With a little experimentation, I found that adding mint and other herbs gives the fish a whole new dimension of rich flavor.

INGREDIENTS (4 Servings):

1 pound wild-caught salmon fillets (about 2 large fillets), diced

2 tablespoons whole-grain mustard

1 handful fresh flat-leaf parsley, finely chopped

1 handful fresh mint, finely chopped

Juice of ½ lemon

¼ white onion, finely chopped

1 tablespoon extra-virgin olive oil

Sea salt and freshly ground black pepper, to taste

1 head broccoli

DIRECTIONS:

1.    Preheat the oven to 425°F. Line a baking sheet with parchment paper.

2.    In a large bowl, combine the salmon, mustard, parsley, mint, lemon juice, onion, and olive oil together thoroughly until it is quite sticky. Season liberally with salt and pepper.

3.    Divide the mixture into 4 even parts, and form 1 burger from each quarter. Place the burgers on the prepared baking sheet, leaving plenty of space between them. Bake for about 25 minutes, or until golden and crisp.

4.    Ten minutes before the burgers are done, steam the head of broccoli for 5 minutes in a steamer basket over simmering water, then chop coarsely and season to taste with salt and pepper. Serve the burgers and broccoli together and enjoy!
