EASY HOMEMADE CHIA SEED JAM

Chia seeds are surprisingly high in protein and do a great job to fill us up without feeling too full or heavy. In this jam they add health benefits plus make a delicious-looking gelatinous jam that is good as a side, snack, on toast or waffles, or with dessert! I also love to use this condiment with roast chicken, turkey, or beef.

INGREDIENTS (12 Servings):

2 cups berries of choice, diced (strawberries work well)

1 cup water

¼ cup chia seeds

¼ cup pure maple syrup or raw honey

DIRECTIONS:

1.    In a large pot, combine all ingredients. Bring to a boil.

2.    Reduce the heat to a simmer, stirring constantly so the chia seeds do not burn.

3.    When the mixture has thickened and the fruit is entirely broken down (about 10 minutes), let cool, and then place in a glass jar. Cool completely before refrigerating.

Note: The jam is ready to eat immediately, but refrigerating it overnight improves consistency. Serve on gluten-free rolls, or use as a garnish for a special dessert!

Variations: Use one kind of berry (blueberries, blackberries, raspberries, mulberries, or cranberries), or make mixed berry jam by using ¼ cup each of strawberries, blackberries, raspberries, and blueberries.
