CASHEW CREAM BITES WITH CHOCOLATE SAUCE

Ice cream lovers, you must try this recipe. It’s a totally guilt-free ice cream made with cashews and just loaded with nutrition: vitamins C and E, good omega fats, protein, and antioxidants. Together with the chocolate sauce, it delivers a mind-blowing explosion of nutritious flavor. If you like bonbon ice cream with vanilla on the bottom and chocolate on top, you are going to enjoy this! This might be one of the recipes I’ve made the most. Be sure to whip the mixture thoroughly in the blender so it is super creamy.

INGREDIENTS (15 Servings):

CASHEW ICE CREAM BITES

1½ cups cashews, soaked in water for 4 hours and drained

Juice of 1 small lemon

½ cup pure maple syrup

¼ cup extra-virgin coconut oil

1 tablespoon pure vanilla extract

2 teaspoons maca powder

Pinch of sea salt

CHOCOLATE SAUCE

⅔ cup cacao powder

½ cup pure maple syrup

¼ cup extra-virgin coconut oil, melted

DIRECTIONS:

CASHEW CREAM BITES

1.    Blend the cashews, lemon juice, maple syrup, coconut oil, vanilla, maca powder, and salt in a high-speed blender until smooth. There should be absolutely no lumps!

2.    Scoop the mixture into the cups of a mini-muffin tin and place in the freezer for 5 minutes.

CHOCOLATE SAUCE

1.    Blend the cacao powder, maple syrup, and melted coconut oil in a blender until smooth, thick, and creamy.

2.    Add a spoonful of chocolate sauce to each cashew cream bite. Serve immediately, or store in the freezer to set the chocolate.
