CHOCOLATE SUNFLOWER BUTTER CUPS

There are so many health benefits in chocolate; cacao is the ingredient in chocolate that makes it healthy, and these little cups are as tasty as they are nutritious. A handful of sunflower seeds will take care of your hunger, while also supplying significant amounts of vitamin E, magnesium, and selenium.

INGREDIENTS (12 Servings):

¾ cup cacao butter

2–6 tablespoons cacao powder

½ cup almond meal

3 tablespoons pure maple syrup

1 cup sunflower butter

DIRECTIONS:

1.    Melt the cacao butter in a small saucepan over very low heat. Once melted, add the cacao powder, almond meal, and maple syrup and mix well. Taste it, and then add more cacao powder if you like it darker and more maple syrup if you like it sweeter.

2.    Line the cups of a mini-muffin tin with paper liners (or use mini silicone baking cups). Spoon half of the chocolate mixture into the cups, filling each one-third of the way. Reserve the other half of the mixture for the top of the cups. Put the baking cups in the freezer for 5 minutes to set.

3.    Remove the cups from the freezer and add a spoonful of sunflower butter to each one. Each cup should now be two-thirds full.

4.    Pour the remainder of the chocolate mixture on top of the sunflower butter. Place the cups in the freezer again, and allow them to set for 15 minutes before enjoying.
