SUNFLOWER BUTTER CRISPY RICE TREATS

This is an organic spin on the traditional crispy rice treats with organic marshmallows and sunflower seed butter, which is a great nut-free alternative to creamy peanut butter. This recipe makes perfectly formed squares to take to lunch or for a quick snack from the refrigerator. It’s also a great treat to bring to a party or an event!

INGREDIENTS (12 Servings):

½ cup coconut oil (such as Nutiva buttery coconut oil)

4 cups gluten-free vegan marshmallows

½ cup organic sunflower butter

¼ teaspoon pure vanilla extract

⅛ teaspoon sea salt

6 cups gluten-free crispy rice cereal

1½ cups organic chocolate chips (such as Enjoy Life)

DIRECTIONS:

1.    Combine the coconut oil and marshmallows in a large, heavy pot over low heat and stir until melted.

2.    Stir in the sunflower butter, vanilla, and salt, then add the cereal and mix until well combined.

3.    Line a 9 × 12-inch baking dish with parchment paper, and press the rice cereal mixture into the pan.

4.    Melt the chocolate chips in a small saucepan over low heat. Pour over the rice cereal mixture, then refrigerate until the chocolate is solid before serving.
