BLACK BEAN PESTO PASTA

Black bean noodles are a pasta lover’s dream; their muscle-building protein, belly-filling fiber, and energizing nutrients will make you throw out all their nutritionally deficient white-flour siblings. Eating pasta has never felt this good!

INGREDIENTS (2 Servings):

1 (8-ounce) package black bean spaghetti

¼ cup pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

½ cup diced fresh mozzarella

⅓ cup chopped fresh basil

¼ cup toasted pine nuts

Sea salt and freshly ground black pepper, to taste

DIRECTIONS:

1.    Cook the spaghetti according to package directions, then drain.

2.    Return the spaghetti to the pot and add the pesto. Stir to coat thoroughly.

3.    Divide the pasta between two serving bowls and top with the tomatoes, mozzarella, basil, and pine nuts. Season with salt and pepper and serve immediately.
