P.B. BANANA BITES

Bananas are high in potassium and a great snack! I like them with organic peanut butter and dark chocolate for a healthy treat.

INGREDIENTS (25 Servings):

4 bananas, sliced

¼ cup organic peanut butter

¼ cup dark chocolate chips

2–3 tablespoons unsweetened coconut flakes

DIRECTIONS:

1.    Line a baking sheet with parchment or wax paper and lay half the banana slices on it.

2.    Spread some peanut butter on each banana slice, then top with a second banana slice. Stick a toothpick into each banana “sandwich” and freeze for 30 minutes.

3.    Melt the chocolate chips in a double boiler on the stove, or microwave on high for 1 minute, stir well, and then microwave again until the chocolate is melted.

4.    Dip the bananas in the chocolate or drizzle it on top. Roll in the coconut flakes and freeze for at least an hour. Remove from the freezer 5 minutes before serving.
