DECONSTRUCTED RAW PEACH COBBLER

This is a deconstructed version of a cobbler, and it’s absolutely delicious. It’s light and fresh and will have you wanting to eat it all. I like to add mint for an extra pop of color and nutrition, plus it pairs wonderfully with the peaches and lemon. This dessert is fully raw and it’s safe to say you won’t even miss the original version.

INGREDIENTS (4 Servings):

CRUST

6 Medjool dates, pitted and soaked in water

½ cup almonds

2 teaspoons ground cinnamon

½ teaspoon pure vanilla extract

¼ cup walnuts

COBBLER

2 peaches, pitted

Juice of 1 lemon

1 teaspoon ground cinnamon, plus more for dusting

1 scant tablespoon raw honey or agave syrup

½ teaspoon pure vanilla extract

¼ teaspoon grated nutmeg

Small handful fresh mint, for garnish

DIRECTIONS:

CRUST

1.    Blend the crust ingredients in a food processor or high-speed blender until combined but slightly chunky.

2.    Press the crust evenly into the bottom of 4 cupcake-size silicone molds and freeze for 2 hours.

COBBLER

1.    Cut the peaches into thin slices. Mix the peaches with the lemon juice, cinnamon, honey, vanilla, and nutmeg and set aside for 10 minutes to combine.

2.    Top the crust with the cobbler mix, dust with cinnamon, and garnish with mint.
