GARBANZO TRUFFLE BURGER

Why eat an ordinary burger when you can eat an extraordinary one? The decadent flavor of truffle oil combined with cheese is to die for! And only a third of this burger is made with beef. Less meat plus more nutrition and flavor sounds almost too good to be true, right? And yet here it is. As with any recipe, always aim for the highest-quality ingredients—in this case, organic, grass-fed beef.

INGREDIENTS (1 Serving):

¼ cup canned chickpeas, rinsed and drained

¼ cup chopped yellow onion

¼ cup ground beef

Sea salt and freshly ground black pepper, to taste

¼ teaspoon truffle oil

1 tablespoon extra-virgin olive oil

2 slices Gouda or cheddar cheese (optional)

Bibb or other sturdy lettuce, for serving

Optional toppings: avocado, tomato

DIRECTIONS:

1.    In a mixing bowl, mash the chickpeas with a fork, then add the onion and beef. Combine thoroughly.

2.    Season with salt and pepper to taste and mix in the truffle oil.

3.    Knead the mixture well, then form into a ball. Press into a burger shape, making sure the edges are solid and rounded.

4.    Heat the olive oil in a skillet over medium-high heat. Place the burger in the skillet and cook, turning once, until browned on both sides and cooked through, 3 to 5 minutes each side.

5.    Top the burger with cheese (if using) and let melt.

6.    To serve, wrap the burger in a piece of lettuce with your favorite toppings (or serve on a salad) and enjoy!
