Banana Puddings with Lemon Cream
FOR A 3.5-4.5 LITRE SLOW COOKER. SERVES 4
If you’re feeding more than four (or just want leftovers) this recipe can be doubled very successfully and cooked in a 6.5 litre slow cooker. It’s worth doing, as these puddings are so delicious that people often go back for seconds. You can use purchased lemon curd (lemon butter) for the Lemon Cream, but if you would like to make your own, the recipe is provided on the following page.
1 egg
½ cup sugar
2 teaspoons maple syrup
1 teaspoon finely grated lemon rind
½ teaspoon vanilla essence or extract
2 teaspoons lemon juice
1½ tablespoons milk
¾ cup plain flour
1½ teaspoons baking powder
½ teaspoon bicarbonate of soda
60g butter, melted
½ cup mashed ripe banana
¼ cup lemon curd
For the Lemon Cream
½ cup lemon curd
1½ tablespoons Greek yoghurt
Grease four 1 cup-capacity metal dariole moulds and line the base of each with a circle of baking paper. Grease again. Fit a rack in the base of the slow cooker and pour in 1 cup of warm water. Turn on to High.
Whisk the egg and sugar together until well combined, and then stir in the maple syrup, lemon rind and vanilla. Combine the lemon juice and milk and leave to stand for 1 minute. Combine the flour, baking powder and bicarbonate of soda. Whisk the lemon juice mixture into the egg mixture along with the dry ingredients and melted butter. Stir in the mashed banana.
Half-fill the dariole moulds with the batter, then place a rounded teaspoonful of the lemon curd in the centre of each. Spoon more batter over the top, filling the moulds to two-thirds full.
Place the moulds into the slow cooker. Pour boiling water around to a depth of approximately 1.5cm. Cover and cook on High for 2–3 hours or until the puddings are cooked through.
Remove the moulds from the cooker and leave to stand for 5 minutes.
Unmould the puddings by running a knife carefully around the insides of the moulds and inverting onto serving dishes. Serve with a dollop of lemon cream. To make the lemon cream, combine the lemon curd and the yoghurt.
