FOR A ONE LITRE SLOW COOKER. SERVES 4 AS A SIDE DISH
This is a relatively small quantity, perfect for a one litre slow cooker. If you want to make a larger amount, the ingredients can simply be multiplied accordingly and made in a larger cooker. The cooking time will need to be lengthened correspondingly, by approximately one and half times (depending on the cooker size).
½ cup quinoa, well rinsed
1¼ cups vegetable stock, or water
2 spring onions, sliced
1 red capsicum, seeded and diced
¼ cup toasted pine nuts
1 tablespoon chopped parsley
1 tablespoon shredded basil leaves
handful of baby spinach leaves
⅓ cup finely grated parmesan
Place the quinoa, stock or water, spring onion and capsicum in the slow cooker and stir to combine. Cover and cook on High for 2 hours or Low for 3½ hours or until the quinoa is tender.
Stir in the pine nuts, parsley, basil leaves, spinach leaves and parmesan, and add salt and white pepper to taste.
