FOR A ONE LITRE SLOW COOKER. SERVES 4 AS A SIDE DISH
An increasingly popular alternative to regular rice, this side dish is very well adapted to slow cooking.
600g cauliflower florets
1 tablespoon water
1 teaspoon lemon juice
¼ teaspoon salt
Place the cauliflower florets in the bowl of a food processor and process until the pieces of cauliflower are approximately the same size as grains of rice.
Place all the ingredients in the slow cooker and stir to combine. Cover and cook on High for 2 hours or Low for 3–4 hours or until the preferred level of tenderness of the cauliflower is achieved. Add extra salt and white pepper to taste.
