Peach Chutney

MAKES 1KG APPROXIMATELY

This is very handy to have in your pantry to serve with meats, or to mix with sour cream or mayonnaise as a quick dip.

750g peaches (clingstone or freestone), weight with stones removed, chopped

250g onions, peeled and chopped

250ml white vinegar

375g sugar

½ teaspoon salt

½ teaspoon nutmeg

½ teaspoon mixed spice

½ teaspoon ground cloves

½ teaspoon curry powder

½ teaspoon dried chilli flakes

¼ teaspoon cayenne (optional)

Combine all the ingredients in a large pot and bring to the boil, stirring. Cook for approximately 1 hour over medium-low heat, stirring occasionally until a chutney-like consistency is reached.

Bottle and seal immediately. Store in a cool, dry, dark place.
