Stuffed Loin of Pork with Redcurrant and Chilli Glaze

FOR A 4.5-6.5 LITRE SLOW COOKER. SERVES 6

This rolled pork loin is a lovely centrepiece for dinner with friends, as it looks impressive but in actuality is simple to prepare. And the redcurrant glaze, with its hint of chilli, complements the pork beautifully.

1.7kg boneless rolled loin of pork, rind and visible fat removed

500g lean pork mince

1 onion, grated

1 egg, lightly beaten

¾ cup wholemeal breadcrumbs

1 tablespoon chopped sage

1 teaspoon ground fennel seeds

1 teaspoon sweet paprika

¼ teaspoon ground ginger

½ teaspoon salt

2 teaspoons tomato, peach or apricot chutney

2 teaspoons soy sauce

2 teaspoons Worcestershire sauce

3 teaspoons cornflour mixed to a paste with 1½ tablespoons cold water (optional)

mashed potato, to serve

seasonal vegetables, to serve

For the Redcurrant and Chilli Glaze

¼ cup sweet chilli sauce

1 tablespoon redcurrant jelly

¼ cup tomato sauce (ketchup)

1 tablespoon dry white wine (such as Chardonnay or Sauvignon Blanc)

¼ teaspoon salt

Unroll the pork and, if necessary, cut a slash into the thicker end so that it butterflies out to the same thickness as the thinner end.

Combine the pork mince, onion, egg, breadcrumbs, sage, spices, salt, chutney and sauces. Spread the mixture over the pork loin and roll up again. Place in the slow cooker seam side down.

To make the redcurrant and chilli glaze, mix all the ingredients together. Pour over the top of the pork. Cover and cook on High for 4–5 hours or Low for 8–9 hours or until the pork is tender.

Remove the pork from the cooker, cover with foil and leave to rest for 15 minutes.

Meanwhile, if necessary, remove the lid and turn the cooker to High and cook, uncovered, for 10 minutes. When the pan juices are bubbling, mix in some or all of the cornflour paste to make a medium–thin sauce. Add salt and pepper to taste and cook for 5 minutes more. Skim any fat from the surface.

Cut the pork into slices, arrange in a serving dish and drizzle with the sauce. Serve with sides of creamy mashed potato and seasonal vegetables.
