MAKES: 1½ CUPS
TIME: 5 MINUTES, NOT INCLUDING DRYING AND ROASTING TIME
Inspired by the Middle Eastern nut-based dry “dip” called dukkah but with tangy, herby all-American ranch dressing flavor, this shake-on seasoning can be used to add nutty crunch and a dash of protein to salads with or without the addition of a dressing.
1 cup raw, sliced almonds
¼ cup toasted or raw sesame seeds
¼ cup chopped fresh chives
2 tablespoons freshly squeezed lemon juice
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
1 Pulse all of the ingredients in a food processor until crumbly.
2 If you have a dehydrator, spread in a thin layer on a solid dehydrator sheet and dehydrate for 6 to 8 hours until dry and crumbly. Store in a tightly covered container in the refrigerator and use within a week. If you don’t have a dehydrator, spread the mixture on a baking sheet lined with parchment paper and roast at 325°F for 15 to 20 minutes. Stir occasionally and remove when the mixture starts to turn a very light golden color (don’t overbrown); cool completely and store as directed.
