MARVELOUS MISO DRESSING

MAKES: ABOUT 1¼ CUPS

TIME: LESS THAN 10 MINUTES

You love miso, so why not pour it all over vegetables? I put miso in many of my dressings, but this silky, versatile sauce particularly brings out the sweet ’n’ mellow richness of white (shiro) miso.

½ cup white (shiro) miso

¼ cup warm water

2 tablespoons mild vegetable oil such as grapeseed oil

2 tablespoons maple syrup

1 tablespoon apple cider vinegar

½ teaspoon toasted sesame oil

1 In a mixing bowl, whisk all of the ingredients together until smooth. Cover, chill, and use within 3 days for best flavor.
