SIDEKICK SLAW

Simple cabbage slaw is by far my favorite companion vegetable during the winter; sweet, crisp cabbage brightens up heavy stews and heavy winter meals like a champ. With a head of green or red cabbage tightly wrapped in the fridge, I make these slaws as needed for a blast of crispy freshness, especially great alongside Latin or Caribbean dishes.


4 cups thinly sliced green or red cabbage (or a blend of both)

1 carrot, julienned, or 1 red or green apple, cored, seeded, and diced

2 tablespoons freshly squeezed lemon juice or apple cider vinegar

Salt and freshly ground black pepper to taste

2 tablespoons chopped fresh cilantro or dill (optional)


1 Combine everything in a bowl and gently massage the cabbage for a minute or two to soften it up. This slaw can be packed up, chilled, and enjoyed the next day.
