KALE, AVOCADO, POMEGRANATE, AND TAHINI
Makes: 1 pint – Time: 10 minutes
YOU NEED
1 to 2 tablespoons Tahini Zinger • 3 ounces lacinato kale, thick stems removed and leaves finely sliced • ½ small avocado, peeled, pitted, and chopped • A small handful of mixed sprouts (such as broccoli, chickpea, lentil, alfalfa, radish) • A small handful of pomegranate seeds • 1 tablespoon mixed seeds (such as pumpkin and sunflower)
This salad is full of antioxidants, heart-healthy fats, and potassium.
Antioxidant Blood Pressure Lowering Mineral Rich
Place the dressing in the bottom of a pint jar. Add half of the kale. Top with the avocado, then the remaining kale, then the sprouts, then the pomegranate seeds and mixed seeds. Seal the jar tightly. Once the salad has been shaken together, leave for 10 minutes to soften the kale.
VEGGIE DRAW
Makes: 1 pint – Time: 10 minutes
YOU NEED
1 to 2 tablespoons Almond Miso Dressing • 1 ounce very finely sliced fennel • 1¾ ounces cherry tomatoes, halved • 1½ ounces seedless cucumber, halved and very finely sliced • 1 small carrot, peeled and very finely sliced • ⅓ cup frozen corn, thawed • ½ small avocado, peeled, pitted, and sliced
This salad is a great detoxifier and immunity booster.
Detoxifying Immune Boosting Gluten-Free
Place the dressing in the bottom of a pint jar. Add the fennel, then the tomatoes, followed by the cucumber, carrot, and corn, and, finally, the avocado (if eating the same day). Seal the jar tightly.
RADISH, CARROT, AND BABY KALE
Makes: 1 pint – Time: 10 minutes
YOU NEED
1 to 2 tablespoons Green Goddess • 2 large radishes, very thinly sliced • 2 small carrots, peeled and coarsely grated • 2½ tablespoons raisins • 2 green onions, very thinly sliced • A handful of baby kale
This salad is great for skin, eyesight, and digestion, and for preventing infection.
Skin Cleansing Digestion Boosting Immune Boosting
Place the dressing in the bottom of a pint jar. Add the radishes, then the carrots, then the raisins, green onions, and baby kale. Seal the jar tightly.
CRUNCHY CABBAGE

1 to 2 tablespoons Apple Cider Vinaigrette • 2 thin green onions, finely sliced • 3 ounces red cabbage, chopped • 1 celery stalk, chopped • ½ red or orange bell pepper, seeded and sliced • 1 large radish, finely sliced
This salad is an excellent source of vitamin C, which revs up your immune system and keeps your skin youthful.

Place the vinaigrette in the bottom of a pint jar. Add the green onions, then the cabbage, then the celery, bell pepper, and radish. Seal the jar tightly.
TOPSY-TURVY
Makes: 1 pint – Time: 10 minutes
YOU NEED
1 to 2 tablespoons extra-virgin olive oil • 2 green onions, finely chopped • 1¾ ounces cherry tomatoes, halved • 6 ounces turnip, coarsely grated (not peeled) • ½ yellow bell pepper, seeded and chopped • 2 ounces Persian cucumber, chopped
This is a great salad for keeping your digestive system healthy.
Digestion Boosting Immune Boosting Detoxifying
Place the olive oil in the bottom of a pint jar. Add the green onions, then the tomatoes, followed by the turnip, bell pepper, and, finally, the cucumber. Seal the jar tightly.
SOUTHEAST ASIAN
Makes: 1 pint – Time: 5 minutes
YOU NEED
1 to 2 tablespoons Thai Pick-Me-Up • 1 small carrot, peeled and julienned • 1 ounce enoki mushrooms • 2½ ounces chopped baby bok choy • ¾ ounce cashew nuts
This salad is full of vitamin A, which is essential for vision, the immune system, and reproduction.
Antioxidant Infection fighting Fertility Supporting
Place the dressing in the bottom of a pint jar. Add the carrot, followed by the mushrooms, baby bok choy, and, finally, the cashews (separated by parchment if not eating that day). Seal the jar tightly.
SQUASH AND LEMON
Makes: 1 pint – Time: 5 minutes
YOU NEED
1 teaspoon lemon zest • 1 tablespoon lemon juice • 1 tablespoon extra-virgin olive oil • Sea salt flakes and freshly ground black pepper • 5 ounces mixed summer squash (such as zucchini, yellow squash, patty pan), thinly sliced • ½ ounce mixed microgreens (such as arugula or kale)
This cleansing salad is great for purifying the blood and flushing out toxins.

Place the lemon zest, lemon juice, and olive oil in a pint jar, with a pinch each of salt and pepper. Add the squash and swirl the jar to coat in the oil. Top with the microgreens. Seal the jar tightly.
