TUNA AND LETTUCE SALAD

SERVES 4

1 recipe Grandma’s Canned Tuna (see recipe on here), shredded with a fork

1 head butter lettuce, roughly chopped

2–3 tbsp. extra-virgin olive oil

1–2 tbsp. red wine vinegar

Salt and pepper

2 scallions, thinly sliced

Parmesan cheese flakes

Olives (if you want—my Grandma always did)

1 cup cannellini beans (optional)

Green beans, blanched (optional)

Place all the ingredients in a salad bowl and toss well to mix.
