Green Soup

SERVES 6–8

This warm, savory soup is nourishing, clean, and full of Mother Nature’s goodness. It’s like a bowl full of heaven. Our Green Soup is light and packed with vitamins, minerals, and loads of fiber. Try a cup of this in the morning before you work out, particularly during those long winter months. It’ll give you energy and comfort. Plus, you won’t cut into your workout time — this takes only 30 minutes to prepare. Garnish with some of our Crunchy Croutons or a little drizzle of our Cashew Cream Everything Sauce.

1 Tbsp. grape-seed oil

1 cup coarsely chopped onion

2 cups coarsely chopped celery

4 cups broccoli florets

1 medium-size zucchini, coarsely chopped

2 cups baby spinach

4 cups water

1 Tbsp. Himalayan pink salt

Pepper to taste

  1     Heat the grape-seed oil in a large soup pot. Add the chopped onion and celery and sauté until the vegetables are slightly tender.

  2     Add the broccoli, zucchini, spinach, water, salt, and pepper. Bring to a boil, then cover and simmer on low heat until all the vegetables are soft but not overcooked. They should still be vibrant green.

  3     Turn the heat off. Scoop half of the soup mixture into a high-speed blender and blend until smooth. Pour into a bowl. Repeat with the remaining soup.

  4     Pour all the blended soup back into the soup pot. Reheat to desired temperature and serve.

image You can mix other vegetables into this recipe, too. Sometimes we substitute 2 cups cauliflower for half the broccoli. We also substitute kale or chard for the spinach when we feel like it. Use your imagination!
