To love someone is to feed them delicious, wholesome food. When these tacos are on the dinner table, you’ll feel the love. They are nourishing and satisfying. Our We Love Jackfruit Tacos are loaded with nutrients and full of flavor. They deliver dietary fiber, vitamin B, vitamin A, and protein. Our son loves Mexican food, and this is one of his all-time favorite meals.
For the filling
1 20-oz. can jackfruit
1 Tbsp. coconut oil
½ cup onion
1 tsp. garlic
1 tsp. cumin
½ tsp. oregano
½ tsp. paprika
¼ tsp. chili powder, or to taste
½ tsp. Himalayan pink salt
2 Tbsp. almond butter
½ cup chopped tomato
1 Tbsp. maple syrup
½ Tbsp. soy sauce
1 tsp. vinegar
8 corn tortillas
Guacamole
Salsa
Shredded lettuce
Fresh lime wedges
1 Open the jackfruit can and drain the water out, then pour the fruit into a bowl and break up with your hands — it should pull apart easily. Set it aside.
2 Heat the coconut oil in a skillet and toss in the onions, garlic, cumin, oregano, paprika, and chili powder. Sauté for 2–3 minutes, or until the onions are tender.
3 Add the jackfruit and salt and cook, stirring, for 5–8 minutes, or until mixture is tender and well combined.
4 Stir in the almond butter, chopped tomato, maple syrup, soy sauce, and vinegar and cook for another 1–2 minutes.
5 Turn off the heat. To serve, spoon a little filling into a corn tortilla with guacamole, salsa, shredded lettuce, and Cashew Cream Everything Sauce and squeeze fresh lime juice over everything.
