Avocado Cilantro Lime Dressing

MAKES 1 CUP

This creamy five-minute dressing will be your new best friend. You will want to pour it on everything for that extra dash of flavor. If you like a little kick, add the jalapeño. If you want to keep it mellow, omit it. The avocado is super creamy and loaded with healthy fats and fiber. The cilantro is an amazing blood detoxifier and purifier. If you have extra Cashew Cream Everything Sauce, use that instead of vegan mayonnaise. This dressing will liven up a Mexican Chop Salad — or any salad, for that matter. It’s so versatile that if you make it a little on the thicker side, you can even use it as a spread on a veggie wrap, a sandwich, or tacos.

1 avocado, peeled, pitted and roughly chopped

1 cup cilantro

2 Tbsp. fresh lime juice

1 1-inch-long jalapeño pepper (optional)

¼ cup vegan mayonnaise, such as Vegenaise, or Cashew Cream Everything Sauce

¼ tsp. Himalayan pink salt

Pepper to taste

¼–½ cup water

  1     Blend all ingredients together in a small food processor or blender, starting with ¼ cup water. Add more water gradually until you get your desired consistency.
