Chicken Drumsticks with Mustard BBQ Sauce

The combination of sweet and tangy flavors in this mustard-based barbecue sauce brings out the absolute best in grilled chicken or pork.

For the Mustard BBQ Sauce:

1/2 cup prepared yellow mustard

1/3 cup apple cider vinegar

1/4 cup light brown sugar

1 tablespoon ground dry mustard

1/2 teaspoon cayenne pepper

For the Chicken Drumsticks:

Vegetable oil, for the grates

12 chicken drumsticks

2 tablespoons olive oil

Kosher salt and freshly ground black pepper

a8 To make the Mustard BBQ sauce: In a large saucepan combine the mustard, vinegar, brown sugar, dry mustard, and cayenne pepper. Over high heat, bring the sauce to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, until the sauce thickens, about 15 minutes.

a8 To make the Chicken Drumsticks: Preheat a clean grill to medium-high with the lid closed for 8 to 10 minutes. Lightly brush the grates with oil.

a8 Lightly brush the chicken with the olive oil. Generously season the chicken with the salt and pepper.

a8 Place the chicken on the grill. Close the lid and cook, turning once or twice, until no longer pink in the middle, about 15 to 18 minutes per side. During the final 5 minutes of cooking, baste the chicken with the Mustard BBQ sauce. Remove the chicken from grill and serve warm.

Serves 4.

a3 Do-Ahead: The Mustard BBQ sauce can be made up to 3 days in advance. Cover and refrigerate until ready to serve. Reheat over medium-low heat.
