YOU NEED
500g strawberries, hulled and quartered
• 2–3 tablespoons runny honey
a squeeze of lemon • 3 tablespoons chia seeds, plus extra if needed
Place the strawberries in a pan and mash with a potato masher. Cook over a medium–low heat, stirring, until the berries release their juice. Stir in the honey and lemon, increase the heat and simmer for 10 minutes, or until thickened. Remove from the heat and stir in the chia seeds. Set aside for 10 minutes – if the mixture hasn’t thickened into a jam add more chia seeds and/or return to the heat for a few more minutes. Cool, then store in an airtight container in the fridge.
