YOU NEED
1 tablespoon olive oil • ½ red onion, chopped • 1 small garlic clove, chopped
½ small red chilli, finely sliced • 100ml passata • 80ml vegetable stock, plus extra if needed • 200g canned red kidney beans, rinsed and drained
10g dark chocolate, 100% cocoa solids, shaved • ½ teaspoon ground cumin
sea salt flakes • freshly ground black pepper • a squeeze of lime
Heat the oil in a small pan and gently fry the onion for 8 minutes until soft. Add the garlic and chilli, and cook for a few minutes more. Add the passata, stock, beans, chocolate, cumin and salt and pepper. Bring to the boil, reduce the heat and gently simmer uncovered for 20 minutes, stirring regularly. Add the squeeze of lime and more salt and pepper to taste. This dish is delicious served with steamed rice.
