SALMON BURGER

Serves: 1 person • Time: 25 minutes, plus 20 minutes chilling

YOU NEED

1 skinless salmon fillet, about 120g, cut into pieces
½ teaspoon fresh ginger, grated • ½ garlic clove, finely chopped
10g fresh breadcrumbs • sea salt flakes • freshly ground black pepper
plain flour, for dusting • 2 tablespoons rapeseed or groundnut oil
1 burger bun, 1 tablespoon mayonnaise and a handful of rocket, to serve

Pulse the salmon in a food processor until roughly chopped. Transfer to a bowl and mix through the ginger, garlic, breadcrumbs and salt and pepper. Shape into a patty and chill for 20 minutes. Then lightly dust the salmon patty with flour. Heat the oil in a frying pan and fry the patty for 3–4 minutes each side. Serve in a burger bun on top of mayonnaise and rocket.
