AHI TUNA BURGERS

Serves 4, Gluten-Free

INGREDIENTS

1 1/2 pounds ahi tuna

2 teaspoons freshly grated ginger

1 garlic clove, smashed and minced

1 tablespoon fish sauce

1/4 cup onions, chopped

1 tablespoon fresh Thai basil, chopped

1 tablespoon fresh cilantro, chopped

1 1/2 teaspoons sesame oil

Brioche or buns of your choosing: gluten-free, pretzel buns, etc.

Pickled cucumbers (see Pickled Cucumber recipe)

4–8 leaves butter lettuce

2 heirloom tomatoes, sliced

PREPARATION

Finely chop tuna and combine with ginger, garlic, fish sauce, onions, Thai basil, cilantro, and sesame oil.

Form 4 patties, cover in plastic wrap, and chill in refrigerator for at least 30 minutes.

Grill burgers to liking and serve on brioche/buns with pickled cucumbers, butter lettuce, and heirloom tomatoes.
