Basmati Rice

MAKES ABOUT 4 CUPS

  1. Rinse the rice and drain well. Repeat several times, until the water runs clear.
  2. Place the rice and 2½ cups of water in a medium pot, cover, and bring to a boil over high heat. Immediately reduce the heat to low and simmer, covered, for 7 to 10 minutes, until all the water evaporates.
  3. Turn off the heat and allow the rice to steam, still covered, for an additional 5 minutes. Once ready to serve, give the rice a good stir, incorporating the rice from the bottom to the top. Serve with tikka masala.

Note: Alternative pressure cooker method: Pressure cook the rice in the water on low for 3 minutes, followed by natural release for 5 minutes and then quick release.
