MAKES 16 BISCUITS
- 1 tablespoon unsalted butter, at room temperature, for greasing
- 1½ cups all-purpose flour
- ½ cup almond flour
- ½ cup granulated sugar
- ½ teaspoon coarse salt
- 1 cup (2 sticks) unsalted butter, cubed and chilled
- 1 teaspoon vanilla extract or paste
- Pinch of turbinado sugar (optional)
Equipment
- 8 × 8-inch baking dish
- Food processor
- Offset spatula
- Parchment paper (optional)
- Set an oven rack in the middle position and preheat the oven to 350ºF. Grease the baking dish with butter and set aside.
- Pulse both flours, the granulated sugar, and salt in the bowl of a food processor to combine.
- Add the butter and vanilla and pulse until the dough resembles wet sand.
- Transfer the dough into the baking dish, evenly smoothing it with an offset spatula.
- Using your hands, firmly press the mixture into the dish to flatten the mixture. If the mixture is too sticky, lay a piece of parchment paper on top of the dough during this process.
- Bake for 30 to 35 minutes, until the top is lightly golden.
- Remove from the oven, sprinkle with the pinch of turbinado sugar, and let cool before cutting. Store in an airtight container at room temperature for up to 3 days, in the fridge for up to 2 weeks, or in the freezer for up to 3 months.
