Spacamole


There’s guacamole and then there’s my Spacamole! I try to add greens to as many dishes as I can – sort of like trying to ‘hide’ them so people don’t freak out. And this is a perfect example. The lime will help stop the avocado browning throughout the day, making it super easy to take to work in a container along with some carrots, cucumbers and radishes for dipping.

100g (¾ cup) frozen peas

1 avocado, peeled and stoned

handful of fresh spinach

juice of 1 lime

½ red chilli (chile pepper), chopped

small handful of coriander (cilantro)

¼ cucumber, roughly chopped

½ red onion, roughly chopped

vegetable sticks, for dipping

Serves 2

Fill a small pan with water and bring to the boil. Add the peas and boil for 5 minutes. Drain and rinse well.

In a food processor or blender, blend the peas, avocado, spinach, lime juice, chilli, coriander, cucumber and red onion until smooth.

Put in a takeaway container with some vegetable sticks for dipping and have yourself a perfect healthy snack.
