SUBWAY: TURKEY BREAST AND BACON MELT WRAP (WITH CHIPOTLE SOUTHWEST SAUCE)

Im a creature of habit who can eat the same dish meal after meal (assuming it’s a dish I love), and it won’t bother me. I eat breakfast food for dinner and dinner food for breakfast—even sushi. Yep, I can enjoy sushi for breakfast.

Though I eat wraps frequently—I might even go so far as to say that they are one of my top 5 standby meals (even for breakfast)—I’d never packed one with as many “normal” ingredients as Subway customarily packs (unless you request otherwise) into its Turkey Breast and Bacon Melt Wrap. Now by “normal,” I mean that I’ve loaded wraps with roasted red peppers, fresh basil, chili paste, sprouts, arugula, and other gourmet ingredients, but it never occurred to me that pickles, green peppers, and olives could enhance turkey in such a wonderful way.

Ever since I tried my first bite of this wrap, I’ve had the combo on my brain (granted, I skip the bacon and cheese and just go for shaved honey turkey breast when eating it often), and I just keep finding myself craving it. That means one thing to me: Not only is this sandwich really tasty, but it’s worth going the additional step to chop up a few of the “extras.” Those “extras” not only add fiber to my diet, they also make me crave healthy fare.

2 slices center-cut bacon

3 slices (¾-ounce each) packaged thick-cut oven-roasted turkey breast

13 ounce (about 2½ tablespoons) finely shredded low-fat Cheddar cheese

13 ounce (about 2½ tablespoons) finely shredded reduced-fat Monterey Jack cheese

1 burrito-size (10") low-carbohydrate whole wheat tortilla

½ cup shredded iceberg lettuce

3 slices tomato (18" thick)

1 slice red onion (18" thick), separated into rings

7 strips green bell pepper (18" thick)

7 rounds dill pickle

2 medium black olives, sliced

1½ tablespoons Subway Chipotle Southwest Sauce

PLACE the bacon in a small nonstick skillet set over medium heat. Cook, flipping occasionally, for 4 to 6 minutes, or until cooked but not crisp. Transfer to a paper towel–lined plate to drain.

Place a sheet of waxed paper on a work surface. One at a time, fold the turkey slices in half. Place 1 slice on the waxed paper. Place the second slice, folded-side facing in the same direction, overlapping about half of the first slice. Place the third slice, folded-side facing in the same direction, overlapping about half of the second slice. Place the bacon slices crosswise over the turkey. Add the cheeses in an even layer. Transfer the waxed paper to the microwave oven. Cook on low power for 10 seconds. If the cheese has not started to melt, cook in 10-second intervals until the cheese starts to melt and the turkey is heated. Set aside.

Place the tortilla on a plate. Place the lettuce, leaving about 1" bare on both ends, in an even strip (about 3" wide) running across the center. Top the lettuce evenly with the tomato, onion, pepper, pickles, olives, and sauce. Carefully flip the reserved turkey-bacon-and-cheese combo onto the filling ingredients. Fold both bare ends over the filling ingredients. Roll the tortilla tightly, finishing it seam-side down on the plate. Cut in half, if desired.
