HUMMUS AND AVOCADO BAGEL

When I was younger and lived with my parents, my mom would buy bags of bagels for us as an easy breakfast before school. We’d smear cream cheese on top and be on our way. Since then, I’ve opted for this upgrade of my childhood favorite. I’ve replaced the cream cheese with two of my favorite toppings. And when I’m feeling fancy, I add some diced tomatoes and green sprouts.

Ingredients:

1 bagel

¼ serving of Homemade Hummus (see page 88) or store-bought hummus

½ avocado, sliced

Pinch of salt and pepper

Optional Toppings:

¼ cup diced tomatoes

1 handful finely diced red or green onion

Squeeze of lemon juice

1 handful sprouts

Directions:

1.    Split the bagel in half. In a toaster or under the broiler, toast the bagel.

2.    Spread the hummus on each side.

3.    Top with the avocado, salt, and pepper.
