When I was a child, I thought the fast-food drive-through was the ultimate solution to busy mornings. This recipe taught me a better way. You can whip it together in minutes flat and start your day packed with nutrition.
Ingredients:
1 microwaved sweet potato, diced (see page 238)
1 teaspoon cinnamon
2 tablespoons raisins
1 tablespoon chopped pecans or walnuts
Optional Toppings:
1 tablespoon coconut shreds
Fresh berries
1 tablespoon peanut butter (creamy or chunky)
Directions:
1. In a medium bowl, combine all the ingredients.
