POTATOES

Yields 1 cooked potato

This works for cooking either sweet potatoes or russet potatoes.

Ingredients:

1 medium potato (sweet or russet)

Directions:

1.    Using a fork, poke holes all over the potato for ventilation.

2.    Put the potato on a microwave-safe plate and microwave it for 2 minutes. Flip it over and microwave for 2 more minutes.

3.    If the potato is not soft yet, microwave again in 1-minute increments until it’s soft. Store in the refrigerator in an airtight container for up to 4 days.

TONI’S TIPS:

>>If you’re using a smaller potato, start off at 1-minute per side.
