HOMEMADE RED SALSA

Yields 2½ cups

You’ll stop buying store-bought salsa when you realize how easy and quick it is to make your own. That, plus it’s a thousand times fresher and more delicious.

Ingredients:

2 cups chopped tomatoes (about 2 medium tomatoes)

½ cup diced red, white, or yellow onion (about ½ medium onion)

1 jalapeño, seeded and chopped

⅛ cup minced cilantro

1 teaspoon minced garlic (about 2 small cloves)

1 teaspoon ground cumin

1½ tablespoons lemon or lime juice (about ½ small lemon or lime)

Salt and pepper, to taste

Directions for a Food Processor:

1.    In a food processor, blend all the ingredients on high until smooth.

Directions by Hand:

1.    Place the tomatoes, onion, and jalapeño in a medium bowl.

2.    Add the cilantro, garlic, cumin, lemon (or lime) juice, salt, and pepper, and mix well.

TONI’S TIPS:

>>My husband loves spicy food. If you’re in that camp, try adding some of the jalapeño seeds to the salsa. And if you think you can handle a hotter pepper, test out a habanero instead of a jalapeño.
