STIC’S DATE NITE POWER SNACK

Back when I first started my blog, I reached out to one of my favorite rappers, Stic of Dead Prez, to see if he’d be interested in collaborating with me in some way. He’s been someone I’ve admired for years. I didn’t think for one second that he’d respond, but he came back to me with this beautifully written article called “7 Ways to Eat Good on a Hood Budget” that he said I could post to my blog. It ended up going viral, and even better, we became friends. I’m so grateful for his contributions to my site and this book. Here’s his quick and delicious favorite snack recipe. I’ll let him describe it in his own words:

This delicious nutrient-dense family favorite is fresh, crispy, nutty, sweet, satisfying, filling, inexpensive, and super simple and quick to make.

I personally like it best with raisins, but wifey likes it with medjool dates, hence the name “date nite.” Almost unfailingly, every night she has her ritual of hot herbal tea and her “date nite” snack plate to relax and wind down from the day. It’s a great go-to snack when you want something tasty, quick, and satisfying without having to cook or reach for junk food.

Ingredients:

2 small apples, sliced

½ cup peanut butter (creamy or chunky)

¼ cup raisins, or 2–3 dates, pitted and halved

Optional Toppings:

⅛ cup coconut flakes

Pinch of cinnamon

Directions:

1.    Place the apple slices peel down on a plate. Smear the peanut butter on top of each slice, using 1 to 2 tablespoons for each.

2.    Sprinkle the raisins (or dates) over the peanut butter side and enjoy.

3.    If you’re feeling gourmet fancy, sprinkle with the optional toppings.
