STRAWBERRY DRESSING

Yields 1½ cups

During the summer, I can find one-pound cartons of strawberries for one dollar. It makes me giddy because I know that means I can use those cartons as an opportunity to experiment with strawberry everything, including this sweet and simple salad dressing.

Ingredients:

1½ cups chopped fresh strawberries

1–2 tablespoons agave, brown sugar, or maple syrup

½ tablespoon lemon juice

Optional Additions:

1–2 mint leaves (start with 1) added in step 1

Directions:

1.    In a food processor or blender, blend all the ingredients until smooth.

2.    Store in an airtight container in the fridge for up to 7 days.
