French Toast Banana Sandwich image

MAKES 4 SLICES TOAST, FOR 2 SANDWICHES

THIS snappy French toast sandwich is delicious topped with syrup, honey, cinnamon, and sugar, or sliced fresh fruit. We suggest using a calcium-rich bread, such as Roman Meal brand, because two slices have as much calcium as one glass of milk! Of course, you can use any bread you have, including gluten-free. Refrigerate leftovers. To reheat, place the French toast on a plate and microwave for a few seconds.

2 large eggs

½ cup milk

1 tablespoon unsalted butter or canola oil, plus more as needed

4 thick slices calcium-enriched bread, or your favorite whole wheat bread

2 bananas, sliced

OPTIONAL TOPPINGS

Pure maple syrup

Honey

Nuts and/or seeds

• In a bowl, mix together the eggs and milk.

• Melt the butter in a large skillet over medium-high heat. Place a slice of bread in the egg mixture and turn to coat both sides, then add the slice to the skillet and cook for 2 minutes on each side, or until thoroughly cooked and golden brown on both sides. Repeat with the remaining bread.

• As you cook the toast, add some of the sliced bananas to the skillet and cook them, about 2 minutes on each side.

• Place a slice of the French toast on each plate, top with some of the banana slices, cover with another piece of toast, and serve with your favorite topping.
