The name of this drink is a take on Love Potion Number Nine—but with the Nantucket ZIP code swapped in. “It’s always good to have a rum-inspired drink when on an island, no matter whether the island is in the Caribbean or New England,” says Jess Goldfarb. “I wanted a rum drink that had good fruit without being too sweet. That’s why I used Rhum Clement, which is an agricole-style rum, meaning no added molasses. Smoking the pineapple dries out some of the residual sugars while the bitters helps balance out the syrup.”
INGREDIENTS
½ ounce Aperol
Ice cubes
3½ ounces Rhum Clement (or rum of your choice)
1 ounce smoked pineapple
½ ounce orgeat syrup
½ ounce lime juice
2 long dashes Angostura bitters
Fresh mint sprigs
Divide the Aperol between two highball glasses and fill each with ice. Combine the rum, smoked pineapple, orgeat syrup, and lime juice in a shaker and shake well; strain into the glasses and top with dashes of bitters. Slap mint in the palm of your hand to release aromas and place as garnish and serve.
