Simple Syrup

Simple syrup is aptly named. All it requires is sugar, water, and some stove time. The result is an easy way to add sweetness to sorbets, granitas, iced drinks and cocktails, and Macerated Fruit. Or use it as a neutrally flavored cake soak (see Vanilla Cake Soak). This is simple syrup in its purest form, but see the list on page 557 for flavoring ideas. For a richer, more potent syrup, decrease the water to 1 or 1½ cups.

Combine the sugar with 2 cups water in a small saucepan; bring to a boil and cook until the sugar is dissolved, stirring occasionally. Set aside and cool to room temperature. Use immediately or store in a clean container or jar, covered, in the fridge for up to 6 months.
