Rainbow Poke Cake

MAKES 1 (9 X 13-INCH) CAKE

There is something about this Rainbow Poke Cake that screams PARTY! You don’t need an excuse to celebrate; get in the kitchen and have fun. Your friends and family will enjoy the fruits of your labor and you don’t have to tell them how easy this is to create.

Nonstick cooking spray

1 (15.25- to 18-ounce) box white or vanilla cake mix

Eggs, oil, and water as directed on the cake mix box

3 cups water

1 (3-ounce) box lime gelatin

1 (3-ounce) box berry blue gelatin

1 (3-ounce) box strawberry gelatin

Easy Decorator’s Frosting, or 1 (8-ounce) tub frozen whipped topping, thawed

Sprinkles or jimmies

Preheat the oven to 350ºF. Spray a 9 x 13-inch baking dish with nonstick cooking spray.

Prepare and bake the cake according to the package directions for a 9 x 13-inch pan. Place the cake on a wire rack and let cool for 20 minutes.

Poke holes evenly over the baked cake using the tines of a fork.

Place 1 cup of the water in a 4-cup microwave-safe glass bowl. Microwave on High (100%) power for 2 to 3 minutes, or until the water comes to a boil. Stir the lime gelatin into the water until it has dissolved. Using a separate bowl for each, repeat with the berry blue and strawberry gelatin, using 1 cup of the remaining water for each.

Pour each gelatin mixture down the cake to form three long rows. Cover and refrigerate the cake for 1 hour.

Frost the cake with Easy Decorator’s Frosting or whipped topping. Sprinkle the sprinkles or jimmies over the top of the cake. Refrigerate until ready to serve.

TIP

You can vary the colors of the rainbow by using different flavors of gelatin. Select the colors that you prefer.
